Copy Cat Cod and Eggs


This recipe (and beautifully styled photos) looked so yummy, I just had to try my own version. 

I made a few tweaks like using microwavable basmati rice, instead of poaching the cod I steamed it, I soft boiled the eggs in a little less than an inch of boiling water for exactly 6 minutes... they come out perfect everytime! 

The end result was beautiful, delicious and healthy.
