The Avocado Egg Stacker


First of all... I am totally in looove with my new slate plates, which I got at HomeGoods for $6 a plate!  (Similar here... but not as great a price). Seriously, that place is the best.

Here's a yummy little breakfast Patton and I had last weekend that I thought I would share with you.

So, you'll  have to excuse my egg poaching skills...They are severely lacking as my egg never stays in that nice little egg shape when I poach and ends up looking a little more amoeba-ish. If any of you have a good tip on how to keep your egg in the egg shape as it poaches, your input is very welcome in the comments!

Begin by poaching an egg in boiling water. While it poaches, slice and avocado and a tomato. You'll use a nice center slice of the tomato as a base for this dish. Then add the avocado slices on top. Next, carefully place the poached egg on top of the avocado, top with bacon bits and chopped green onion, and season with salt and pepper. I served mine with a few sausage links, but this is a great breakfast all on its own and only takes about 5 minutes to make!

    I find that a drop of vinegar in the water helps keep the egg in shape! A chef in know coats a ladle with vinegar and breaks the egg into that before submerging in the rolling boil water.
