All About the Sprouts



A couple of weeks ago, I saw a beautiful picture of Brussels Sprouts on pinterest and underneath, the caption said "Brussels Sprouts, Avocado, and Lime." Two of my favorite things... and Brussels Sprouts. 

I couldn't find a link to an actual recipe so I just went for it, and Patton and I discussed... this may be our new "Very Favorite Side Dish!"

Take a dozen or so sprouts and cut them into quarters. Add the zest of an entire lime and throw it all into a frying pan. Douse liberally with olive oil and start cooking on medium heat. Once the oil starts sizzling, squeeze the juice of half a lime over the sprouts and let it all simmer together, stirring occasionally. After about eight minutes, add a nice heap of bacon bits to the mix. 


In the meantime, cook some delicious steak in another frying pan. I cook over high heat in lots of butter with salt and pepper. Depending on the thickness of course, you want to flip your steak every few minutes, and make sure to finish it off with a nice sear on each side. Once it is cooked, remove from the heat and let it rest for at least four minutes to seal in those juices.

While the sprouts and steak are cooking, chop up an avocado and some cilantro. When the Brussels sprouts and bacon have been cooking together for about two minutes, throw in your avocado and cilantro, squeeze in the rest of that lime juice, add a little salt and pepper, and let everything simmer for about two more minutes.

Now add a big pile of the most delicious sprouts in the entire universe next to your wonderful steak.
