Snakes and Sea Monsters


A little bit creepy, but completely yummy..

Snakes and Sea Monsters

Boil linguini in salted water until it is cooked. Then toss your pasta in heated olive oil with fresh parsley and a bit of garlic.

Chop a whole cleaned octopus into large chunks. I like to cut the head into rings and leave the tentacles fairly long.

In a large pan, heat olive oil over high heat. When the oil is sizzling, throw in your octopus chunks and cook them quickly. Within a couple of minutes the octopus will go from white-ish lavendar to a purple-ish red. When this begins to happen remove it from the heat... you want your sea monster nice and tender, not chewy.

Serve side by side with your pasta, and be sure to add a little salt and pepper.
