Peas and Mint

I love peas, and always have. With a little bit of butter and some salt, I think peas are  just perfect. 

But if you want to go a little further, here is a terrific way to punch up your peas.

Peas and Mint 

Boil a package of frozen peas until they are cooked. Drain and allow a couple of pats of butter to melt onto them.  

Chop a handful of fresh mint, dice up a few crunchy radishes, and grate a bit of pecorino cheese and toss it all together with the buttery peas. 

Season with salt and pepper and you have a terrific side dish in minutes!
